Long Paddock Silver Wattle, soft lactic cheese

Long Paddock Silver Wattle

Long Paddock Cheese · Castlemaine, Victoria

Light, lemony and mousse-like when young, growing creamy, oozy and gently yeasty as it ripens.

  • Cow's milk
  • Pasteurised milk

The cheese

Long Paddock Cheese makes its cheese in Castlemaine, Victoria, on Dja Dja Wurrung country. It was founded by French cheesemaker Ivan Larcher and Alison Lansley, and uses certified organic cow's milk from a nearby family farm. Silver Wattle is a small, soft lactic cheese in the style of St Marcellin. Its thin, wavy Geotrichum rind ripens it from the outside in, and each cheese is wrapped in paper and packed in its own wooden box.

Tasting notes

Young Silver Wattle is cream-coloured, light and mousse-like, with a fresh, lemony, lactic flavour. As it ripens it turns creamy and oozy under the rind, and the lemon mellows into rounder, yeasty notes.

How to enjoy

Spread it on crusty bread or crackers, or slice a younger cheese into a summer salad. It is made for bubbles: Champagne or a dry sparkling balances the yeasty notes. A pét-nat or a Riesling also works well. It is light enough for warm afternoons, so it suits an Australian summer board.
