Blend of 3 terroirs, 1/3 of each.
- Caillottes – Valley – Small stones over big rocks of limestone = Stone fruit, florals, light mouth è stainless steel tank to keep the expressive noses
- Terre Blanche on the Hills of Kimmeridgian Clay (same as Chablis) –=Tense, Richness, backbone, acidity, nose less expressive è oak tanks and barrel to smooth the tension and keep the backbone
- Griotte – Cris small stones over Terre Blanche = expressive nose of White flowers, concentrated mouth with minerality more than acidity è Acacia tank and barrels to accompany the flowery noses.
100% hand picked. Only a small racking. He keeps a as much substance as possible for fermentation. Wild fermentation, 30% fermentation in steel tank, 30% fermentation in Acacia barrels, 30% in French oak. No new barrels, only vapored inside, no toasting. Bottling after 18 months of aging. Only sulphured at bottling
