Crottin de Chevre

Poitou-Charentes, France

Crottin is a small, round goat's cheese from the Loire Valley in France. As it ages, the rind develops a beautiful, wrinkled texture and may develop hints of white and blue mold. The interior transforms from a dense, chalky center to a firmer, crumbly paste. The flavor intensifies significantly, evolving from a fresh, nutty taste to a more pronounced, savoury, and complex profile with a distinct "goaty" tang.

  • Appearance: Small, round disc with a wrinkled, mottled rind that may have white and blue molds with age.
  • Aroma: Pungent and earthy, with a strong, savory "goaty" aroma.
  • Texture: Firm and crumbly in the center, becoming slightly softer under the rind.
  • Flavour: Sharp and tangy, with nutty and savoury notes that deepen with age.

Fromagerie Poitou Chèvre is a testament to a long-standing regional cheesemaking tradition. Originally founded by local goat farmers as the cooperative Bougon dairy, in 2016, Poitou Chèvre, a family-owned company, took over the operations, revitalising the historic site and dedicating it to the production of traditional Poitou cheeses. The company's mission is to preserve and promote the authentic flavors of Poitou's goat cheeses, with all milk sourced from farms within 50km of the dairy.
