Feta has PDO status in Greece, meaning only cheese made in designated regions from predominantly sheep's milk can carry the name. But within that protected category, there is significant variation — most commercial feta today is made and brined in stainless steel vats, producing a consistent but relatively mild result. Barrel-aged feta is different. The oak barrels impart subtle tannins and allow the cheese to develop in a way that vat-aging simply cannot replicate: the paste becomes drier and more crumbly, the flavour tangier and more assertive, with a savouriness and depth that lingers on the palate.
Will Studd's Aphrodite selection sources this feta from small Greek producers maintaining the traditional method — and the difference is apparent from the first taste. It's a cheese with genuine presence on a board, confident enough to be served simply with good olive oil and bread, without needing anything to prop it up.
Crumble it generously over a slow-roasted tomato salad, layer it into a spanakopita, or press it into a fig alongside a walnut and a drizzle of thyme honey. For wine, the acidity and salt call for something with structure and freshness — a Mornington Peninsula Pinot Gris, a Chablis, or a crisp Sauvignon Blanc from the Adelaide Hills.
