Fermented wild in concrete with 19% whole bunches. Plunged once daily with a total of 11 days on skins before stomping by feet, another 4 days of maceration and 10 months in neutral puncheons.
The tannins – long limbed, saline, chalky and gritty – the wine's opus.
A timbre of tension plying detail and freshness across notes of kirsch, pink grapefruit pulp, mint, clove and orange peel.
The finish, a slow build of furled density and sweetness, giving just enough away for pleasure while promising much more.
Charlie Seppelt and Skye Salter have covered many miles and worked in many places since they met in 2008 working the vintage at Hardys Tintara in McLaren Vale. By the time they took the plunge and established Paralian Wines in ’18 they had accumulated 46 vintages between them, working for others.
The name is a noun for someone who lives by the sea. Charlie’s first exposure to McLaren Vale was as a vintage casual at d’Arenberg and it was vinous love at first sight.
