Buffalo milk mozzarella is in a different category to the cow's milk version. The higher fat content produces a whiter, more yielding curd with a flavour that's distinctly richer — faintly grassy, lactic and deep — and a texture that's firmer on the outside, almost porcelain-smooth, giving way to a softer, wetter centre. Vannella makes theirs fresh in Marrickville using traditional pasta filata technique, and it's as close as you'll find in Sydney to what you'd pull apart at a table in Campania.

It asks very little of you. The best way to eat it is simply: let it come to room temperature, slice it thickly, arrange it with ripe tomatoes and torn basil, and season well. Anything more elaborate risks missing the point. That said, it also holds its own in a warm application — draped over a pizza at the last moment or laid over roasted peppers with anchovy.

Serve with Champagne, a good Fiano, or a fragrant Vermentino. Keep it cold until ten minutes before you need it.
