Halloumi has become one of the world's most-cooked cheeses, but authentic PDO halloumi from Cyprus is a different proposition entirely to the imitations sold in supermarkets. To carry PDO status, it must be produced in Cyprus from a blend of sheep's and goat's milk — the breeds, the method and the geography all protected by law. Aphrodite's version, selected by Will Studd, is the genuine article: firmer, saltier and more characterful than mass-produced alternatives, with a clean, grassy richness that comes directly from the milk.
The defining quality of halloumi is its high melting point — it can be grilled, pan-fried or barbecued until golden on the outside while remaining firm and yielding within. That contrast of crust and interior, combined with the salty, slightly squeaky texture, is what makes it so satisfying. Slice it thickly and cook it hot and fast; serve it immediately while it still has that warmth and give.
It works beautifully alongside ripe summer tomatoes, watermelon, mint and a pour of lemon juice — the Cypriot way. On a board it adds texture and substance. For wine, a dry, mineral-driven Rosé or a cool-climate Assyrtiko cuts through the salt and fat cleanly.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
