Ossau Iraty is a sheep's milk cheese which is semi-hard in texture, with a brine-rubbed rind, produced in the Basque Country, France.
It can only be produced using the milk from the Manech and Basco-Béarnaise breeds.
A firm yet supple cheese, in that the hard rind holds within a smooth, buttery pate with complexity of flavours. Notes of sweet fruit, nuts and roasted lamb.
Pair with Pinot Noir.

Ossau Iraty production is claimed to be the oldest surviving tradition in the world, with records dating back more than 4000 years. It received an AOC protection in 1980, which requires that the cheese be produced with the milk of only two breeds of ewes - Manech and Basco-Béarnaise.
