Chevassu-Fassenet Chardonnay Sous Voile 2018

Made under a thin voile (veil) of yeast, this traditional method allows the wine greater exposure to oxygen. Careful winemaking ensures that despite the extended lees contact the aged wine is not overly oxidative or bready. The palate is filled with rich orchard fruits all wrapped in the characteristic tannic tension of the wines from this famous region. Wonderfully different.
