Fermentations took place in open fermenters, with varying proportions of whole bunches (around 15%), and gentle punchdowns or pumpovers over 7 to 10 days on skins to extract fine tannin and perfume without excess weight.\u003c\/p\u003e\n\u003cp\u003ePost-fermentation, the wines were pressed and transferred to oak for maturation, with approximately 10% new oak used. The final blend brings together six Pinot Noir clones (MV6, Abel, 777, 114, 115 and D2V5), adding complexity and nuance to the finished wine.
