Legend credits a farmer, Marie Harel, who is said to have learned the method from a priest from Brie. Unlike Brie, Camembert is small, and the curd is ladled whole into its moulds rather than cut. Ours is selected by Hervé Mons, one of France's most respected cheese maturers.

Tasting notes

Beneath its white rind, tinged with rust as it matures, the paste is pale straw in colour and soft and supple. It smells of button mushrooms. The flavour is rich and earthy, with an almost truffle-like depth and a gentle, lingering finish.

How to enjoy

Baked Camembert is a classic for entertaining. Take it out of its wrapping and put it back in its wooden box. Score the top, add garlic and thyme, and bake at 180°C for 15 to 20 minutes. Serve with crusty bread, cornichons and salami. Unbaked, it pairs well with Chardonnay or Champagne. Take it out of the fridge an hour before serving.
