The Chardonnay is from the Cemetery Block at the base of the Piccadilly Valley, on alluvial black sand. Sixth-generation growers Jenny and James Griggs farm that block. The grapes are whole-bunch pressed and aged in a vitrified ceramic egg. Nothing is added, including sulphur.\u003c\/p\u003e\n\u003cp\u003eSaline and textural, with honeysuckle, a waxy richness and a fresh, mineral finish.\u003c\/p\u003e\n\u003cp\u003ePairs well with alpine cheeses such as Comté and Gruyère, or a washed-rind.
