Uplands Pleasant Ridge Reserve is made by Andy Hatch and Scott Mericka in Wisconsin, USA.
Named after the land formation on which our farm sits, Pleasant Ridge Reserve is made in the tradition of Alpine cheeses like Gruyere and Beaufort. Like the Alpage versions of these cheeses, Pleasant Ridge Reserve is only made from May through October when the cows are eating fresh pasture.
The sweetness born from the grass-fed raw milk combines with the savoury flavours developed by the cheese’s natural, washed rind. The result is a cheese with complexity – rich and salty, with a long, fruity finish.
