TicklemoreDevon, England Pasteurised Goat's Milk
Ticklemore is made on the Sharpham Estate by Debbie Mumford and Mark Sharman. The natural white blooms on the rind form during the maturing process after the cheese has formed in an oval basket.
The paste is bone-white and chalky and the flavour is fresh, light, almondy and a true expression of the milk's character. More mature cheeses will show some delicate breakdown beneath the rind.
