Loire Valley, France Pasteurised Goat’s MilkA log-shaped, close-textured cheese, traditionally impaled with a straw for ease of handling. The straw is laser-printed with the details of each cheese-maker, allowing traceability. The creamy white interior melts beneath the rind. Mild, rich and peppery, the flavour is less salty than its fellow Loire Valley goat's cheeses. Dusted in charcoal ash, the cheese pairs perfectly with white wines of the region.
