ManchegoLa Mancha, Spain Unpasteurised Sheep's Milk
Manchego is made with milk from the Manchega breed of sheep and produced in the La Mancha region of Spain, which consists of a vast, high plateau, more than 600 meters above sea level, that extends between the adjoining provinces of Toledo, Cuenca, Ciudad Real, and Albacete, all in the Castile-La Mancha Autonomous Region.
Traditionally made in esparto grass baskets, today the moulds are printed with a similar zig-zag design. During the maturation process the cheeses are rubbed in olive oil, imbuing the pate with a delicate spiciness.
Our Manchego is made from raw milk and has been aged between twelve and eighteen months, allowing the texture to become grittier and fruiter and the colour of the pate to darken.
Pair with a Garnacha or a chilled glass of Fino.
