L'Etivaz

Canton Vaud, Switzerland Unpasteurised Cow's Milk

This cheese from Canton Vaud is produced in a truly traditional way, in copper vats over an open wood fire.  During the summer and early autumn the cattle graze on alps between the glaciers of Les Diablerets and the vineyards of Lake Geneva.  The cheeses are matured in a modern cellar in the village of Etivaz. L'Etivaz is small window into how all Gruyères would have once tasted. Produced using milk exclusively from the summer months, the flavours have depths that give the cheese an intensely fruity flavour (our current batch tastes of blueberries!), while still being an expression of the terroir.  

Enjoy with a full bodied white, such as Gruner Veltliner.
